Today I'm sharing a super easy dessert recipe that is perfect for summer. In my family, we simply call this "the green stuff". But I guess the official name is Pistachio Nut Dessert. It is only 6 ingredients and it's so yummy and light, so it won't make you feel ridiculously full.
Ingredients:
50 Ritz crackers
1 stick butter
1 quart vanilla ice cream
2 small packages of Jello instant pistachio nut pudding
1 1/2 cups milk
1 small carton of cool whip
Directions:
1. Preheat your oven to 350 degrees
2. Crush all of the crackers in a large bowl
(you could use a food processor, I just smash them with a spoon or fork,
you want a pretty fine texture without big chunks of cracker)
3. Melt the stick of butter, add it to the crackers and mix together
4. Spread the cracker/butter mixture in the bottom of a 9x12 pan. Glass is best, but I have also used a metal baking pan. Whatever you have
5. Press the mixture down in the pan as much as possible. This will be the crust.
6. Bake for 10 minutes and then let it completely cool
While your crust is baking, you can mix the other ingredients
7. Allow your 1 qt ice cream to soften
8. Mix the ice cream, both packages of the pistachio nut pudding mix and the milk together (mix well, there shouldn't be lumps)
9. Pour the mixture on cooled crust and put in the refrigerator to firm up
10. Spread the entire carton of cool whip on top
11. Enjoy!
*You can sprinkle toasted coconut on top, if desired (I never do this, I'm not a big coconut fan)
To toast coconut: spread shredded coconut on a baking (cookie) sheet, bake for 1 minute at 300 degrees
